English abstract

This work has as a practical aim to design a system that enables searching technological information that provides knowledge about the process of production of functional juices which derivate from a series of nutraceuticals that they have been obtained from olive, rosemary and artichoke. So it has been performed through the next actions: 1. Diagnostic of searching and information retrieval systems in enterprises that produce juices. In this way it is analysed the initial situation on which to design an advanced information system. 2. Elaboration of an adapted vocabulary to the technological domain about nutraceuticals in juices. This vocabulary will enables to carry out information searching. 3. To establish the previous situation to the information search about scientific and technological knowledge available so far and so, to specify the search domain and to avoid its semantic dispersion. 4. Evaluation and selection of the databases to use. 5. Evaluation and selection of the enterprises that are going to be used to provide the information for the study. There are included the principal producers of juice in the World, so it enables to watch the innovations that they carry out. 6. Collection of information from the pertinent databases. 7. To collect information from the activities of the sector enterprises. The result is that there is not a simple solution to carry out because the dispersion of information. Scientific publications about food technology and nutrition are good information sources to know particular results of investigations that are being carried out. Nevertheless, this is a difficult information source to manage by the enterprises. Although patents content exhaustive information about structure and protected inventions by the competitive enterprises they are relatively not much used in this technological domain. Nevertheless, an important quantity of relevant information for this sector is already available on the Internet. It is a positive fact as the improvements which are being carried out in internet search engines, including semantic functions and indexing increasingly databases on the deep web, as it can be predicted that this situation in which the information is so dispersed it is on the way to solve it soon. Recent improvements in the Alltheweb or Google search engines, as in the Vivisimo, Ixquick or Copernic meta search engines go on this direction. Juices are one of the foods which have a better perception among consumers because their healthy properties. Therefore juices are a suitable mean to add nutraceuticals to them in order to make them functional. Moreover food enterprises functional juices are an interesting product as they have a bigger added value, technologically more complex and provide better economic profit margins. The final conclusion of this work is that there exists a latent industrial demand of technologies related with the addition of natural nutraceuticals to the production of functional juices. Although the performed research investigation projects by CSIC and universities there exist a wide field to research which it can be transferred to industrial applications, since the major part of the national production of juices is focused on South Eastern Spain.

Spanish abstract

Este trabajo tiene como objetivo práctico diseñar un sistema que permita buscar información tecnológica que permita conocer el proceso de fabricación de zumos funcionales hechos a base de una serie de nutracéuticos obtenidos del olivo, romero y alcachofa. Para llevarlo a cabo se han realizado las siguientes acciones: 1. Realización de un diagnóstico de los sistemas de búsqueda de información en las empresas fabricantes de zumos. De esta forma se analiza la situación de partida sobre la que diseñar un sistema de información más avanzado. 2. Generación de un léxico adaptado al ámbito tecnológico de los nutracéuticos en zumos. Este léxico permitirá llevar a cabo las búsquedas de información. 3. Establecer la situación previa a la búsqueda de información de los conocimientos científicos y técnicos disponibles hasta ese momento y así acotar de forma precisa el ámbito de la búsqueda y evitar su dispersión. 4. Evaluación y selección de las bases de datos a utilizar. 5. Evaluación y selección de las empresas de las que se va a recabar información. Se incluyen los principales productores de zumos del mundo, de forma que es posible vigilar las innovaciones que éstos llevan a cabo. 6. Recogida de información de las bases de datos pertinentes. 7. Recogida de información de las actividades de las empresas del sector. El resultado es que no existe una solución sencilla de llevar a cabo por la dispersión de la información. Las publicaciones científicas sobre tecnología de alimentos y nutrición son un buen vehículo para conocer resultados concretos de investigaciones que se están llevando a cabo. Sin embargo esta es una fuente de información compleja de gestionar por parte de las empresas. Las patentes, pese a contener información estructura y exhaustiva de las invenciones protegidas por las empresas competidoras, se utilizan relativamente poco en este ámbito de la técnica. Sin embargo gran cantidad de información relevante para este sector está ya incluida en internet. Se trata de un dato positivo puesto que las mejoras que se están llevando a cabo en los buscadores de internet, incluyendo funciones semánticas e indexando cada vez más bases de datos de la web profunda, permiten aventurar que esta situación en la que la información esta dispersa no va a tardar mucho en resolverse. Las mejoras realizadas recientemente en los buscadores alltheweb o google, así como la mejora en los metabuscadores como vivisimo, ixquick o copernic, van en esta dirección. Los zumos son uno de los alimentos que tiene una mejor percepción en cuanto a sus propiedades saludables por parte de los consumidores. Son por tanto un vehículo idóneo para incorporarle nutracéuticos que los haga funcionales. Además para las empresas los zumos funcionales son productos de interés ya que tienen mayor valor añadido, siendo más complejos tecnológicamente y de los que se obtienen mejores márgenes. La conclusión final de este estudio es que existe una demanda industrial latente de tecnologías relacionadas con la adición de nutracéuticos naturales a la producción de zumos funcionales. A pesar de los proyectos de investigación realizados por los centros del CSIC y Universidades todavía existe un amplio campo de investigación que puede ser llevado directamente a su aplicación industrial ya que la mayor parte de la producción nacional de zumos está concentrada en el sureste español.
